The great secret that we feel we can share with you has always been the use of the highest quality ingredients, the slow and natural leavening, the production mostly done by hand (all the thin strips of dough are pulled by hand by our "Stiratrici" before being put in the oven), a slow cooking that gives the necessary time to the product to become crispy and golden. These are the characteristics that make our products identical in taste and authenticity to those that our great-grandfather baked 150 years ago.
