 It is an unrefined flour, less white because it still contains the vital germ of wheat. The taste can only be more intense, the rustic scent is an obvious characteristic. Compared to other flours it is less humid, it can absorb 5% more water in the dough, it keeps better and longer (24 months), there is no need to sieve it and it does not contain unwanted butterflies.

It naturally contains a higher quality of fiber and germ and therefore more mineral vitamins and beneficial nutrients than a classic white flour. It has a balanced strength (W 260) and allows leavening with very little yeast!
