Pasta Etna is made from selected raw materials and careful processing, which includes vacuum kneading of semolina and the use of water from pure Etna springs.
What gives it its excellence is the bronze drawing of the dough, which passes through a matrix with holes of different shape and size, depending on the desired format, and then cut out by a series of blades. It is the bronze of the matrix that gives it roughness, porosity and rough colouring, characteristics of artisan pasta.
In addition, the slow and gradual drying to which it is subjected preserves proteins, minerals and vitamins, guaranteeing superior body and taste.
