In the heart of the Reggio Emilia Apennines, with passion and pride, consortium's approved farmers produce and process the milk that perpetuates the ritual of the creation of the PDO Parmigiano Reggiano cheese.
The 993 Cavola dairy offers a PDO "mountain quality" Parmigiano Reggiano with a 30-month maturation, whose organoleptic properties are in accordance with the strict protocol of the consortium.
At 30 months, PDO Parmigiano Reggiano is particularly crumbly and grainy. The flavour is pronounced with notes of spices, nuts and meat stock. It is an ideal ingredient for filled and baked pastas or to be tasted at the end of meals, paired with fruit and honey. Try it with balsamic vinegar: a true delicacy.
The product is shipped in shrink-wrapped vacuum packs.

Ingredients: selected fresh milk, salt, rennet. Without additives and preservatives.

993 is the serial number of our dairy!

The Cavola dairy was founded in 1929, in a small village in the mountains of Reggio Emilia, surrounded by an uncontaminated paradise of forage meadows, at an altitude of 900 meters.

The farm cultivates its fields using only farm manure as fertilizer, without chemical fertilizers and pesticides.

The resulting forage is therefore better and healthier, a genuine diet of the cows that allows the production of milk of the highest quality.

The Parmigiano Reggiano that derives from it, therefore, has an extra gear compared to that of the plain.

Over the decades and generations, the Cavola 993 dairy has grown, improved and improved its production, while remaining anchored to the much-loved tradition.
