In a perfect balance with the natural environment of the Reggio Emilia Apennines, on the edge of the Tuscan-Emilian National Park, the Cavola 993 dairy offers an organic PDO Parmigiano Reggiano with a 24-month maturation period. The organoleptic properties of this cheese respond to the strict protocol of the consortium of PDO Parmigiano Reggiano, with the added value of organic farming.
At 24 month, PDO Parmigiano Reggiano is soluble, crumbly and grainy with the right balance between mildness and tastiness, with notes of fresh fruit, nuts and meat stock. Perfect with medium body wines and to add flavour to all the dishes of the Italian tradition.
The product is shipped in shrink-wrapped vacuum packaging.

Ingredients: selected fresh milk, salt, rennet. Without additives and preservatives.

993 is the serial number of our dairy!

The Cavola dairy was founded in 1929, in a small village in the mountains of Reggio Emilia, surrounded by an uncontaminated paradise of forage meadows, at an altitude of 900 meters.

The farm cultivates its fields using only farm manure as fertilizer, without chemical fertilizers and pesticides.

The resulting forage is therefore better and healthier, a genuine diet of the cows that allows the production of milk of the highest quality.

The Parmigiano Reggiano that derives from it, therefore, has an extra gear compared to that of the plain.

Over the decades and generations, the Cavola 993 dairy has grown, improved and improved its production, while remaining anchored to the much-loved tradition.
