The guitar is the typical Abruzzese tool used to make homemade pasta called macaroni alla chitarra. It is formed by a rectangular wooden frame in which, by means of keys, many thin steel wires, similar to the strings of a guitar, are stretched at 3-4 mm intervals. Strips of fresh pasta are placed on these metal strings and, by pressing the rolling pin, they are cut into square spaghetti, suitable to be seasoned with different types of sauce. Before the invention of this tool, which took place around 1860 in the province of Chieti, to obtain the typical square section spaghetti, the pasta was cut with a special rolling pin notched.

Its name already appears in 1789, when it obtained a licence from the Municipal Council for the production and sale of high quality pasta. It has always been the first pasta factory in Gragnano in terms of size, quality and volume, thanks to its ability to keep tradition alive by putting it at the service of modernity and technology. Knowing Garofalo's roots is a first step to understand where his passion, his craftsmanship and his innovative spirit come from.
