This type of pasta takes its name from the typical butterfly shape, obtained by pinching a rectangle of pasta in the center. It has very ancient origins: according to experts, the first version dates back to the sixteenth century. This refined dish is certainly not part of the Italian culinary tradition, let alone Neapolitan, but has had considerable success with the spread of smoked salmon on our tables especially during the Christmas period. To make the recipe can be used clippings and the part of the tail of the smoked salmon, not suitable for more aesthetically elaborate preparations.

Its name already appears in 1789, when it obtained a licence from the Municipal Council for the production and sale of high quality pasta. It has always been the first pasta factory in Gragnano in terms of size, quality and volume, thanks to its ability to keep tradition alive by putting it at the service of modernity and technology. Knowing Garofalo's roots is a first step to understand where his passion, his craftsmanship and his innovative spirit come from.
